Menu Monday - Herb Baked Tilapia

Monday, October 12 - Sunday, October 18:

Monday: Tomato Soup w/Grilled Cheese Sandwiches
Tuesday: Hamburger Mac n Cheese w/ Cheesy Vegetables
Wednesday: Herb Marinated Tilapia w/Rice and Veggies
Thursday: Pan Seared T-Bone Steak w/Mashed Potatoes and Veggies
Friday: Philly Cheese Steak Sandwiches
Saturday: Skillet chicken with creamy lime sauce, w/cilantro lime rice and veggies
Sunday: Chili

Highlighted Recipe - Herb Baked Tilapia




Our inspiration for this recipe came from: Paula Deen's Recipe on The Food Network

Ingredients:
2 Tilapia Fillets
1/2 t. Salt
1/2 t. Pepper
1 T Basil (we just use our seasoning)
1 t. Oregano (we just use our seasoning)
1 t. Onion Powder
2 minced garlic cloves
3 T olive oil
1 Large Tomato, thinly sliced
1 t. Lemon Juice

Directions:
  • Preheat oven to 400 degrees
  • Mix salt, pepper, basil, oregano, onion powder, garlic and olive oil in a small bowl
  • Pour contents over both pieces of tilapia to really marinate all the flavors
  • Arrange tomato slices evenly and drizzle with lemon juice (we like adding the lemon juice even before cooking)
  • Bake 20 - 25 minutes
  • Add more lemon juice and enjoy!
We normally serve this over a bed of rice with some extra veggies on the side. Typically we make a little extra of the olive oil mixture and mix that into our rice with some lemon juice and it's amazing! Our daughter isn't the biggest fish eater, but this is one dish she absolutely loves!
