Menu Monday - Mozzarella Stuffed Chicken

Happy Monday to Everyone!

Spring time always seems to encourage even healthier eating with the extra delicious veggies and fruits that are available.  I hope everyone is feeling the same way!

This week we'll be enjoying:

Monday: Mozzarella Stuffed Chicken
Tuesday: Chicken Teriyaki Skewers

This week I'm going to highlight another favorite of ours, Mozzarella Stuffed Chicken.  Click the link below to see the recipe:

Ingredients:
  • Chicken breasts (# depending on how many people you're cooking for)
  • Mozzarella string cheese (1 per chicken breast)
  • 1 - 2 garlic cloves minced
  • Salt
  • Pepper
  • Basil
  • Oregano
  • Chili Powder

Directions:
  • Thaw your chicken breasts
  • If your chicken breasts are thick, you can cut them in half like a book leaving the very edge of one side still intact.
  • If your chicken breasts are thinner, place between two pieces of plastic wrap and pound to create a flatter surface to wrap your cheese
  • Season both sides of your chicken breast with Salt, pepper, basil, oregano and chili powder
  • Spread minced garlic on one side
  • Place the string cheese on top
  • Roll chicken breasts and secure with tooth picks
  • Bake at 350 degrees for 35 - 40 minutes
  • Check, if still slightly pink back for another 5 - 10 minutes
You can serve this with a side of parmesan sprinkled broccoli or asparagus.  You can also make a small amount of spaghetti and serve this as your protein, whatever your preference.
