Spring time always seems to encourage even healthier eating with the extra delicious veggies and fruits that are available. I hope everyone is feeling the same way!

This week I'm going to highlight another favorite of ours, Mozzarella Stuffed Chicken. Click the link below to see the recipe:

Ingredients:- Chicken breasts (# depending on how many people you're cooking for)
- Mozzarella string cheese (1 per chicken breast)
- 1 - 2 garlic cloves minced
- Salt
- Pepper
- Basil
- Oregano
- Chili Powder
Directions:
- Thaw your chicken breasts
- If your chicken breasts are thick, you can cut them in half like a book leaving the very edge of one side still intact.
- If your chicken breasts are thinner, place between two pieces of plastic wrap and pound to create a flatter surface to wrap your cheese
- Season both sides of your chicken breast with Salt, pepper, basil, oregano and chili powder
- Spread minced garlic on one side
- Place the string cheese on top
- Roll chicken breasts and secure with tooth picks
- Bake at 350 degrees for 35 - 40 minutes
- Check, if still slightly pink back for another 5 - 10 minutes
