Menu Monday - Rotisserie Chicken & Strawberry Salad

Menu Monday - Oct 5 - Oct 11
  • Monday: Five Bean Chili Recipe
  • Tuesday: Turkey Shepherd's Pie
  • Wednesday: Chili Cheese Dogs w/Left Over Chili and Turkey Hot Dogs & Veggies
  • Thursday: Spaghetti w/ Ground Turkey and Mushrooms
  • Friday: Sloppy Joe Grilled Cheese w/Veggies
  • Saturday: Kansas State University Football Game = Tailgate
  • Sunday: Rotisserie Chicken & Strawberry Salad
Highlighted Recipe - Rotisserie Chicken & Strawberry Salad



 

Ingredients:

1 hot and ready WalMart rotisserie chicken (we switch it up between Teriyaki and Lemon Pepper)
Fresh Strawberries
Ice berg salad or Spinach (your preference)
Craisins
Sweet nuts (can be peanuts, pecans, walnuts, your choice)
Optional - Feta cheese
Strawberry Vinaigrette

Directions:

  1. Let the chicken cool off where you can work with your bare hands
  2. Peel all of the skin off of the chicken and discard
  3. Shred the chicken into bite size pieces
  4. Cut the strawberries into quarters
  5. Once you're ready to put the salad together just put down a nice sized bed of salad, top with the chicken, strawberries, craisins and sweet nuts. Then put your dressing on top and mix well
This is Tony and I's go-to recipe on shopping day. We'll get home with all of our groceries, put everything away and just want to veg out. So we'll throw a show on and tear the chicken apart and once we're ready for dinner we just throw the salad together.

The left over chicken is also great for lunch time sandwiches, wraps, and additional salads.
