Menu Monday - Santa Fe Soup

Weekly Menu for November 16 - 22:

Monday: Santa Fe Soup
Tuesday: Left Overs
Wednesday: Turkey Shepherds Pie
Thursday: Broccoli Chicken Skillet
Friday: Grilled Cheese Sloppy Joes w/Veggies and Soup
Saturday: Meatball Sandwiches
Sunday: Chicken Tortilla Soup




Highlighted Recipe: Santa Fe Soup



Ingredients:

  • 1 lb ground beef or turkey
  • 1 lb Velvetta
  • 1 onion, chopped
  • 1 can Rotel
  • 1 14 oz peeled and diced tomatoes
  • 1 can whole kernel corn
  • 1 cans ranch-style beans
Directions:
  • Brown the hamburger/turkey and drain the grease
  • Cube the velvetta cheese
  • Mix all ingredients, can juices and all, into your crock pot
  • Cook on low 6 - 8 hours
We will serve our soup with sour cream and tortilla chips. :-D
